Sanglier means "Wild Boar" in French. Our old vineyard had a pack of wild boar that would run through the vineyard eating up our precious Syrah grapes. One year we decided to pick a portion of the vineyard a bit earlier than the rest to try to fool the wild boar into thinking that all the fruit was already gone. This earlier harvested fruit had a bit lower color, brighter natural acidity, and a lower potential alcohol than would have been useful for our red wines...so, we put them directly in our press and crafted our first Rose... We named the wine after the beast that inspired us to pick the grapes a bit earlier...
With the 2011 Vintage, we are keeping this tradition alive. This year we selected some yummy Grenache, Mourvedre and even some Syrah and saignéed it off the skins and fermented the juice in 2 stainless steel barrels. The result is this delicious, fresh, spicy, fruity, crisp Rose.
